Only fully ripe, healthy grapes reach the vinification. In the traditional bottle fermentation "method champenoise" sparkling wine remains in the original bottle until the completion. Like that a fine-beaded Mousseaux and a ripe, aromatic note develop, which characterize this sparkling wine.
